Celebrate Your Adoptive Child’s Culture with Authentic Foods

As cooler weather is beginning to settle in for fall, I begin to crave the comfort and warmth that soup brings.  A warm bowl of soup just seems to hit the spot when the temperature begins to drop.  My Ukrainian children love Green Borscht (no beets allowed for those of you afraid of them.).  It is especially fun to have friends over and make it all together.  My girls have friends from Ukraine that come over and we make an evening of it, not only celebrating their culture, but creating memories.  Try this recipe for Green Borscht.

To make your own memories try a traditional soup from your child’s birth country, such as Teleshko Vareno – a Bulgarian Beef Soup.  Make a day of it.  Invite family and friends and celebrate your child’s birth country’s cuisine.

Teleshko VarenoTeleshko Vareno  (serves 4-6)

1-2 pounds of round steak
3-4 large carrots cut in to slices
1 onion cut in to ¼ sections
4-5 large potatoes – diced
1-2 stalks of celery – chopped
1-2 bay leaves
2-3 cloves
1 tsp. Sea Salt
½ tsp of black pepper
32oz. Beef Stock

In a pan, brown the round steak then drain.  Put in large dutch oven, add Beef Stock, salt, pepper, bay leaves and cloves.  Cook 3-4 hours on low heat.  Add vegetables and cook for another hour.  Garnish with fresh parsley.  Enjoy!
